Malaysian Satay with Roasted Vegetables
A flavorful and colorful dish that combines the rich flavors of Malaysia with the earthy sweetness of roasted vegetables.
Ingredients
- β1 bunch Mixed Vegetables (bell peppers, zucchini, carrots)
- β1/4 cup Peanut Sauce (satay)
- β2 tbsp Coconut Oil
- β1 tsp Ginger
- β2 cloves Garlic
- β1 tsp Coriander
- β1 tsp Cumin
- β1 tsp Salt
- β1 tsp Black Pepper
- β1/4 cup Roasted Peanuts

Preheat oven to 425Β°F (220Β°C).

Toss the mixed vegetables in coconut oil, coriander, cumin, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes or until tender.

In a blender, combine peanut sauce, ginger, and garlic. Blend until smooth.

Heat a grill or grill pan to medium-high heat. Thread the roasted vegetables onto skewers and brush with peanut sauce.

Grill the satay for 2-3 minutes per side or until slightly charred.

Serve the satay with additional peanut sauce and roasted peanuts.
