Pan-Seared Salmon with Fried Rice
A hearty and easy-to-make dish that combines the flavors of pan-seared salmon with crispy fried rice.
Ingredients
- β2 Salmon fillets6 oz each
- β1 cup Uncooked ricepreferably day-old rice
- β2 tablespoons Vegetable oilfor frying
- β1 Onionchopped
- βto taste Salt
- βto taste Black pepper
- β2 Lemon wedgesfor serving
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the cooked rice to the skillet and stir-fry for 2-3 minutes, breaking up any clumps with a spatula.

Season the fried rice with salt and black pepper to taste.

In a separate pan, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.

Add the salmon fillets, skin side up (if they have skin), and cook for 3-4 minutes, until the skin is crispy and golden brown.

Flip the salmon over and cook for an additional 3-4 minutes, until cooked through.

Serve the pan-seared salmon on top of the fried rice, with a squeeze of lemon juice and a side of steamed vegetables.
