Lamb Wrap Italian Style
A hearty Italian-inspired lamb wrap filled with fresh vegetables and herbs.
Ingredients
- β1 pound Lamb shouldercut into thin strips
- β4 Italian flatbread wraplarge wraps
- β1 cup Mediterranean hummusstore-bought or homemade
- β1 cup Chopped cucumberthinly sliced
- β1 cup Chopped red bell pepperthinly sliced
- β1/4 cup Chopped fresh parsleychopped
- β1/2 cup Crumbled feta cheeseoptional
- β Salt and pepperto taste

Preheat oven to 400Β°F (200Β°C).

In a large bowl, whisk together salt, pepper, and lamb shoulder. Let marinate for at least 30 minutes.

Remove lamb from marinade and place on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until cooked through.

Warm Italian flatbread wraps by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Spread 2 tablespoons of Mediterranean hummus on each wrap.

Add sliced lamb, cucumber, red bell pepper, and chopped parsley on top of the hummus.

Sprinkle crumbled feta cheese on top (if using).

Fold wrap in half and serve immediately.
