Saudi Arabian Vegan Stuffed Bell Peppers
A flavorful and nutritious twist on traditional stuffed peppers, inspired by Saudi Arabian cuisine and made entirely vegan.
Ingredients
- β4 bell peppers
- β1 cup gouda cheese (vegan alternative)
- β2 tsp tagine spice blend
- β2 tbsp olive oil
- β1 medium onion
- β2 cloves garlic
- β1 cup quinoa
Instructions

Preheat oven to 375Β°F (190Β°C).

Cut the tops off the bell peppers and remove the seeds and membranes.

In a large skillet, heat the olive oil over medium heat.

Add the onion and garlic and cook until the onion is translucent.

Add the quinoa and cook for 1-2 minutes.

Stir in the tagine spice blend and vegan gouda cheese.

Stuff each bell pepper with the quinoa mixture.

Place the bell peppers in a baking dish and cover with a lid.

Bake for 25-30 minutes or until the bell peppers are tender.
