Hearty Irish Mushroom Stew
A vegetarian take on the classic Irish beef stew, featuring sautéed mushrooms and root vegetables in a rich broth.
Ingredients

- ●1 large, chopped onion
- ●2 medium, peeled and chopped carrots
- ●2 large, peeled and chopped potatoes
- ●2 stalks, chopped celery
- ●4 cups vegetable broth
- ●2 tablespoons all-purpose flour
- ●1 teaspoon dried thyme
- ●1 teaspoon salt
- ●1/2 teaspoon pepper

Heat oil in a large pot over medium heat.

Add onion, carrots, and celery; cook until tender.

Add mushrooms and cook until they release their liquid and start to brown.

Add flour and cook for 1 minute.

Gradually add vegetable broth, whisking continuously.
