- β1 pound Beef Stew MeatCut into 1-inch cubes
- β1 large OnionChopped
- β2 medium CarrotsSliced
- β2 large PotatoesDiced
- β2 tablespoons All-Purpose FlourDredge beef in flour
- β4 cups Beef BrothHomemade or store-bought
- β1 cup Red WineOptional
- β2 sprigs ThymeFresh or dried
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black PepperTo taste

1. Heat oil in a large Dutch oven over medium-high heat.

2. Dredge beef in flour, shaking off excess.

3. Brown beef on all sides in hot oil, then remove.

4. Add onion to pot, cooking until softened.

5. Add carrots and potatoes, cooking for 5 minutes.

6. Add beef broth, red wine (if using), thyme, salt, and pepper.
