Thai Empanada Spring Rolls
A fusion twist on traditional spring rolls, combining the crunch of fried empanada dough with the flavors of Thai cuisine.
Ingredients
- β1 package Homemade Empanada DoughHomemade empanada dough can be store-bought if unavailable
- β1 cup Sauerkraut
- β1 cup Venezuelan Cheese
- β1 cup Shredded Carrots
- β1/2 cup Green Onions
- β1/4 cup Thai Basil
- β1 cup Vegetable Oil
- β2 tbsp Thai Red Curry Paste

1. Cut the empanada dough into small squares and roll out each square into a thin sheet.

2. Heat 1/2 cup of vegetable oil in a pan over medium heat.

3. Add the Thai red curry paste and cook for 1 minute until fragrant.

4. Add the shredded carrots and cook for 2 minutes until slightly tender.

5. Add the sauerkraut, cheese, green onions, and Thai basil. Cook for 2 minutes until the sauerkraut is slightly tender.

6. Place a spoonful of the filling mixture onto one half of each empanada sheet.

7. Fold the other half of the empanada sheet over the filling and press the edges together to seal.

8. Heat the remaining 1/2 cup of vegetable oil in a pan over medium-high heat.

9. Fry the empanada spring rolls until golden brown, about 2-3 minutes per side.

10. Drain the spring rolls on paper towels and serve hot with your favorite dipping sauce.
