Classic Greek Beef Stifado
A traditional Greek beef stew that's hearty and flavorful, made with tender beef, onions, garlic, and a rich, sweet sauce.

- β1 pound Beef stew meat
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 tablespoons All-purpose flour
- β2 tablespoons Red wine vinegar
- β2 tablespoons Grape molasses
- β1 tablespoon Brown sugar
- β1/2 teaspoon Ground cinnamon
- β1/2 teaspoon Ground cumin
- β1/2 teaspoon Salt
- β1/4 teaspoon Black pepper
- β4 slices Bacondiced

1. Cut the beef into 1-inch cubes and season with salt and black pepper.

2. Heat the diced bacon in a large Dutch oven over medium heat. Once crispy, remove the bacon from the pot and set aside.

3. Add the chopped onion to the pot and cook until translucent, about 5 minutes.

4. Add the minced garlic and cook for an additional minute.

5. Add the beef to the pot and cook until browned on all sides, about 5-7 minutes.

6. Sprinkle the flour over the beef and cook for 1 minute.

7. Add the red wine vinegar, grape molasses, brown sugar, cinnamon, and cumin to the pot. Stir to combine.

8. Return the bacon to the pot and bring the mixture to a simmer.

9. Reduce the heat to low and let the stifado cook, covered, for 2-3 hours, or until the beef is tender.

10. Serve the stifado hot, garnished with fresh parsley or thyme, if desired.
