Ukrainian Shrimp Fritters
A hearty Ukrainian-inspired appetizer or snack featuring succulent shrimp in a crispy fritter batter.
Ingredients
- β1 pound peeled and deveined Shrimp
- β1 cup All-purpose flour
- β2 large Eggs
- β1 cup Grass-fed buttermilk
- β1 cup cubed Hearty whole-grain Ukrainian-style bread
- β1/2 cup grated Grass-fed cheddar cheese
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1/4 cup melted Butter

1. In a large mixing bowl, whisk together flour, eggs, buttermilk, salt, and black pepper.

2. Add the cubed bread and grated cheese to the bowl. Mix until the bread is evenly coated.

3. Gently fold in the shrimp until they are evenly distributed throughout the batter.

4. Using a 1/4 cup measuring cup, scoop the batter into balls and flatten slightly into patties.

5. Heat about 1/2 inch of butter in a large skillet over medium-high heat.

6. When the butter begins to foam, add 4-5 patties to the skillet and cook for about 3-4 minutes on each side, until golden brown and crispy.

7. Remove the fritters from the skillet and place on a paper towel-lined plate to drain any excess oil.
