- β1 pound Beef (for stewing)cut into bite-sized pieces
- β4 cups Vegetable brothhomemade or store-bought
- β2 medium Tomatoesdiced
- β1 medium each Mirepoix (onion, carrot, celery)diced
- β1 medium Fenneldiced
- β1 cup Red wineoptional
- β3 cloves Garlicminced
- β1 tablespoon Thymefresh or dried
- β2 Bay leavesfresh or dried
- β2 tablespoons Olive oilfor cooking

Heat the olive oil in a large pot over medium heat.
