Fabada Asturiana with Pan-Seared Veal
Authentic Spanish-inspired dish from the Asturias region, featuring tender veal and hearty fabada beans.
Ingredients
- ●4 Veal chops
- ●1 cup dried Fabada asturiana beanssoaked overnight
- ●1 medium Onionchopped
- ●3 cloves Garlicminced
- ●2 tsp Pimentón
- ●1 tsp Smoked paprika
- ●to taste Salt
- ●to taste Black pepper
- ●2 tbsp Olive oil
Instructions

Heat 1 tbsp olive oil in a large skillet over medium-high heat.

Add the veal chops and sear until browned on both sides, about 2-3 minutes per side.

Transfer the veal to a plate and set aside.

In the same skillet, add the remaining 1 tbsp olive oil.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for 1 minute.

Add the soaked fabada beans, pimentón, smoked paprika, salt, and black pepper.

Stir to combine and cook for 1-2 minutes.

Return the veal chops to the skillet and simmer until heated through.

Serve the veal chops with the fabada bean mixture spooned over the top.
