Irish Beef Stew
A hearty and comforting Irish beef stew made with tender chunks of beef and fresh vegetables.
Ingredients
- β1.5 pounds Beef stew meat
- β1 large Onion
- β2 medium Carrots
- β2 large Potatoes
- β2 tablespoons All-purpose flour
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1 sprig Fresh thyme
- β1 cup Red wineoptional
- β2 cups Beef broth

Heat oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned on all sides, about 5 minutes. Remove from pot and set aside.

Add the onion to the pot and cook until softened, about 5 minutes.

Add the carrots and potatoes to the pot and cook for 5 minutes.

Add the flour to the pot and cook for 1 minute.

Add the browned beef back into the pot, along with the salt, pepper, and thyme.

Add the red wine and beef broth to the pot and bring to a boil.

Reduce heat to low and simmer, covered, for 2 hours, or until the beef is tender.

Serve hot, garnished with fresh thyme.
