Jamaican Roast Cauliflower Casserole
A hearty and crunchy casserole filled with Jamaican flavors, featuring roasted cauliflower as the main ingredient.
Ingredients
- β1 head cauliflowerbroken into florets
- β2 cups roastcrushed
- β2 cups all-purpose flourfor roux
- β1/4 cup vegetable oilfor frying
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tsp jamaican jerk seasoningto taste
- β1 cup shredded cheddar cheesefor topping

Preheat the oven to 400Β°F (200Β°C).

In a large skillet, heat the oil over medium heat. Add the onion and garlic and cook until softened.

Add the roasted and crushed roast to the skillet and stir to combine.

Add the flour to the skillet and stir to make a roux, cooking for 1-2 minutes.

Add the jerk seasoning to the skillet and stir to combine.

In a large bowl, toss the cauliflower florets with the skillet mixture until well coated.

Transfer the cauliflower mixture to a 9x13 inch baking dish.
