Saffron Pilaf with Mascarpone Raita
A flavorful and creamy Indian-inspired pilaf dish paired with a cool and tangy mascarpone raita.
Ingredients
- β1/2 teaspoon saffron threadssoaked in 1 tablespoon of hot water
- β1 cup hearty pilafpreferably basmati or jeera rice
- β8 ounces mascarpone cheesesoftened at room temperature
- β1 cup plain yogurtgreek yogurt or regular plain yogurt
- β1 medium cucumberpeeled and grated
- β1/4 teaspoon corianderground coriander powder
- β1/4 teaspoon cuminground cumin powder
- β1/2 teaspoon saltto taste

Heat oil in a large saucepan over medium-high heat.

Add the soaked saffron and its liquid, and stir for 1-2 seconds.

Add the pilaf and stir to coat with oil, then add 2 cups of water and bring to a boil.

Reduce heat to low, cover, and simmer for 15-20 minutes or until the pilaf is cooked.

In a separate bowl, mix together mascarpone, yogurt, cucumber, coriander, cumin, and salt.

Fluff the cooked pilaf with a fork and serve hot with the raita on the side.

Adjust seasoning as needed and garnish with chopped coriander if desired.
