Crispy Paella Casserole
A twist on the classic Spanish dish, this Mexican-inspired paella casserole is crispy on the outside and hearty on the inside.
Ingredients
- β1 box paella
- β1 package casabe
- β1 loaf portuguese bread
- β1 lb ground beef
- β1 onion
- β1 red bell pepper
- β1 can diced tomatoes
- β2 cups chicken broth
- β1 lb shrimp
- β1 bag crisp tortilla chips
Instructions

Preheat oven to 400Β°F (200Β°C).

Prepare the paella according to the package instructions.

Cut the casabe into 1-inch cubes and set aside.

Cut the portuguese bread into 1-inch cubes and set aside.

In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.

Add the diced onion and red bell pepper to the skillet and cook until the vegetables are tender.

Add the diced tomatoes and chicken broth to the skillet and stir to combine.

Bring the mixture to a simmer and cook for 5 minutes.

Stir in the cooked paella, casabe, and portuguese bread. Cook for an additional 2 minutes.

Transfer the mixture to a 9x13 inch baking dish and top with the shrimp.

Bake the casserole in the preheated oven for 15-20 minutes, or until the shrimp are pink and the casserole is hot and bubbly.

Sprinkle the crisp tortilla chips on top of the casserole and serve hot.
