Ukrainian Vegan Pilaf
A hearty and flavorful vegan pilaf dish inspired by Ukrainian cuisine, made with a variety of grains and vegetables.
Ingredients
- β1 cup pilaf mix
- β1 1/2 cups chickpeas
- β2 medium carrots
- β1 medium onion
- β3 cloves garlic
- β2 tablespoons olive oil
- β1 teaspoon dried thyme
- β1 teaspoon dried parsley
- βto taste salt
- βto taste black pepper
Instructions

Heat oil in a large saucepan over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for an additional minute.

Add carrots and cook until tender, about 5 minutes.

Add pilaf mix and cook for 1-2 minutes, until lightly toasted.

Add chickpeas, thyme, parsley, salt, and pepper. Stir to combine.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes, or until the liquid has been absorbed.
