Thai Chicken Tagine
A hearty and flavorful Thai-inspired dish made with chicken, tagine spices, and a hint of bitterness.
Ingredients
- β1 pound chicken breastcut into 1-inch pieces
- β2 tablespoons tagine spice blendavailable at most Asian markets
- β1 tablespoon brown sugaroptional
- β2 tablespoons fish sauceoptional
- β1 cup chicken brothlow-sodium
- β1 bunch algerian bitter greenssuch as kale or collard greens
- β2 tablespoons coconut oilfor cooking
Instructions

Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of coconut oil to the skillet and cook the tagine spice blend over medium heat, stirring constantly, until fragrant, about 1 minute.

Add the brown sugar and fish sauce (if using) to the skillet and stir to combine.

Add the chicken broth to the skillet and bring to a boil.

Return the chicken to the skillet and stir to coat with the sauce.

Reduce the heat to low and simmer, covered, until the chicken is cooked through and the sauce has thickened, about 10-15 minutes.

Stir in the algerian bitter greens and cook until wilted.
