Vegan Vietnamese Beef Noodle Soup
A plant-based twist on a classic Vietnamese beef noodle soup, featuring ground 'beef' made from com and tam.
Ingredients

- β1/2 cup gingered comfor added depth of flavor

- β1 package vietnamese rice noodlesto serve
- β2 tablespoons vegan fish saucefor umami flavor
- β2 tablespoons lime juicefor brightness
- β1 tablespoon brown sugarfor balance
- β1/4 cup chopped cilantrofor garnish

Bring 4 cups of tam to a boil in a large pot.

Reduce heat to a simmer and add 1 tablespoon of vegan fish sauce, 1 tablespoon of brown sugar, and 2 tablespoons of lime juice.
