Galangal and Ginger Meatballs
Spicy meatballs made with ground meat and infused with the flavors of galangal and ginger.
Ingredients
- β1 pound Ground Syrian
- β2 inches Galangal
- β1-inch piece Ginger
- β1/2 cup Bread, plainBreadcrumbs
- β1 Egg
- β1 medium Onion
- βto taste Salt
- βto taste Black pepper
- β2 tablespoons Olive oil
- β2 tablespoons Fish sauce
- β2 tablespoons Soy sauce

1. Preheat oven to 400Β°F (200Β°C).

2. In a food processor, combine galangal, ginger, onion, salt, and black pepper. Process until coarsely chopped.

3. In a large bowl, combine ground meat, processed mixture, bread, egg, fish sauce, and soy sauce. Mix well with your hands until just combined.

4. Use your hands to shape the mixture into meatballs, about 1 1/2 inches in diameter. Place on a baking sheet lined with parchment paper.

5. Drizzle with olive oil and gently roll to coat.

6. Bake for 18-20 minutes, or until cooked through.

7. Serve hot, garnished with chopped cilantro or scallions if desired.
