- β1 cup fresh spinachchopped
- β1 can chickpeasdrained and rinsed
- β1 tsp cuminground
- β1 tsp corianderground
- β1/2 tsp turmericground
- β1/2 tsp saltoptional
- β1/4 tsp black pepperoptional
- β2 tbsp olive oilfor brushing

Preheat the oven to 400Β°F (200Β°C).

In a large bowl, combine the sweet potato, onion, garlic, spinach, chickpeas, cumin, coriander, turmeric, salt, and black pepper. Mix well.
