Portuguese Paella with Grilled Fish
A traditional Portuguese-inspired paella dish with the addition of grilled fish for extra flavor.
Ingredients
- β1 cup Paella rice
- β2 tablespoons Grassy extra virgin olive oil
- β4 pieces Fish fillets (any white fish)such as cod or tilapia
- β1 cup Portuguese chorizo
- β1 medium Small onionchopped
- β3 cloves Garlicminced
- β1 cup Cherry tomatoeshalved
- β1 teaspoon Smoked paprika
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

1. Heat the grassy olive oil in a large paella pan over medium-high heat.

2. Add the Portuguese chorizo and cook until browned, about 2-3 minutes.

3. Add the chopped onion and minced garlic and cook until softened, about 3-4 minutes.

4. Add the halved cherry tomatoes and cook for an additional 2 minutes.

5. Add the smoked paprika, salt, and black pepper and stir to combine.

6. Add the paella rice and stir to coat with the oil and spice mixture.

7. Add 2 cups of water to the pan and bring to a boil.

8. Reduce heat to low and simmer, covered, for 20 minutes or until the rice is tender.

9. Meanwhile, grill the fish fillets over medium heat until cooked through, about 4-5 minutes per side.

10. To serve, place the cooked paella on a large platter and top with the grilled fish fillets.
