Gooey Yoghurt Strudel
A traditional German dessert featuring a gooey centre and a crispy strudel crust. This recipe combines the sweetness of yoghurt with the crunch of mediterranean pastry.
Ingredients
- β500g YoghurtFull-fat yoghurt is recommended for the best flavour and texture.
- β1 sheet Mediterranean PastryYou can find this in most supermarkets or make your own from scratch.
- β100g Granulated SugarAdjust to taste.
- β1 EggBeaten for egg wash.
- β50g ButterMelted for egg wash.
- β1 tsp CinnamonOptional, but adds a nice flavour.

1. Preheat your oven to 200Β°C (400Β°F).

2. Roll out the mediterranean pastry on a floured surface to a large rectangle.

3. Spread the yoghurt evenly over the pastry, leaving a 2cm border around the edges.

4. Sprinkle the granulated sugar and cinnamon over the yoghurt (if using).

5. Fold the edges of the pastry up over the filling to create a seal.

6. Brush the egg wash over the pastry to give it a golden brown colour.

7. Bake the strudel in the preheated oven for 25-30 minutes, or until golden brown.

8. Remove from the oven and let cool for a few minutes before serving.
