Spicy Mexican Tagine Stew
A twist on traditional Mexican cuisine, this spicy stew is made with the unique flavors of Egyptian spices, gooey cheese, and tangy olives.
Ingredients
- β1 tsp Tagine spice blend
- β1 cup, shredded Gooey cheese
- β1/2 cup, sliced Olives
- β1/4 cup Sour cream
- β1 large, diced Egyptian eggplant
- β1 large, diced Onion
- β3 cloves, minced Garlic
- β2 tbsp Tomato paste
- β1 tsp Chili powder
- β1 tsp Cumin

Heat oil in a large Dutch oven over medium-high heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add eggplant and cook until tender, about 5 minutes.

Add chili powder and cumin; cook for 1 minute.

Add tomato paste and cook, stirring constantly, for 1 minute.

Add Tagine spice blend and cook for 1 minute.

Add sliced olives and cook for 2 minutes.

Stir in sour cream and cook until heated through.

Transfer to a serving dish and top with shredded cheese.
