Kenyan Fritters
A classic Kenyan snack, these fritters are crispy on the outside and gooey on the inside.
Ingredients
- β 1 cup all-purpose flourcan be substituted with whole wheat flour
- β 1/2 cup shorteningcan be replaced with vegetable oil
- β 1/4 cup gooeyadjust to desired level of gooeyness
- β 1/2 teaspoon salt
- β 1/4 teaspoon black pepper
- β 1/4 teaspoon cayenne pepperoptional
- β 2 eggsbeaten
- β 1 cup buttermilk

Preheat oil in a deep frying pan to 375Β°F (190Β°C).

In a large bowl, whisk together flour, salt, black pepper, and cayenne pepper.

In a separate bowl, whisk together eggs and buttermilk.

Add gooey and mix until a smooth batter forms.

Gradually add dry ingredients to wet ingredients and mix until just combined.

Using a spoon, drop small balls of the batter into the hot oil.

Fry fritters until golden brown, about 3-4 minutes.

Using a slotted spoon, remove fritters from the oil and place on a paper towel-lined plate.
