Toasted Spinach Delight
A Japanese-inspired spinach dish with a crispy toasted twist. Enjoy as a side or light meal.
Ingredients
- β200g Golden Spinach
- β2 tbsp Toasted Sesame Seeds
- β150g Delightful Delicata Squash
- β2 tbsp Coconut Oil
- β1 tbsp Soy Sauce
- β1 tbsp Rice Vinegar
- β1 tsp Sugar
- β1 tsp Salt
- β1/4 tsp Black Pepper

1. Preheat the oven to 180Β°C (350Β°F).

2. Wash the spinach and delicata squash, then chop into bite-sized pieces.

3. In a large pan, heat 1 tablespoon of coconut oil over medium heat.

4. Add the chopped delicata squash and cook for 3-4 minutes.

5. Add the spinach to the pan and cook until wilted.

6. In a small bowl, whisk together soy sauce, rice vinegar, sugar, salt, and black pepper.

7. Pour the sauce over the spinach and delicata squash mixture.

8. Transfer the mixture to a baking dish and top with toasted sesame seeds.
