Thai-Style Golden Chickpea Fritters
A crispy and flavorful street food-inspired snack made with golden chickpeas and topped with khanom and krok.
Ingredients
- β1 can (15 oz) chickpeasdrained and rinsed
- β2 tbsp goldenvegetable oil
- β2 tsp thai red curry paste
- β1/4 cup khanomchopped
- β1/4 cup krokchopped
- β1 tsp salt
- β1/2 tsp black pepper
- β1 egg

Preheat the oil in a deep frying pan to 350Β°F (180Β°C).

In a bowl, mash the chickpeas using a fork.

Add the curry paste, salt, and black pepper to the bowl and mix well.

Add the egg to the bowl and mix until a dough forms.

Using your hands, shape the dough into small patties.

When the oil is hot, add 2-3 patties to the pan and fry for 2-3 minutes on each side.

Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

Serve the fritters hot with chopped khanom and krok on top.
