Russian-Indian Bean Pilaf
A unique fusion dish combining the flavors of Russia and India, featuring a hearty bean pilaf.
Ingredients

- β1 cup Red Kidney Beanscooked and drained
- β2 cups Basmati Riceuncooked
- β1 medium Russian-style Cucumberpeeled and diced
- β2 tablespoons Gheeor vegetable oil
- β1 teaspoon Indian Spicesgaram masala, cumin, coriander

- βto taste Black Pepper
- β1/4 cup Fresh Cilantrochopped, for garnish

Heat ghee in a large saucepan over medium heat.

Add diced cucumber and cook until slightly softened, about 3-4 minutes.

Add green bean sprouts, Indian spices, salt, and black pepper. Cook for 2-3 minutes, stirring frequently.

Add cooked red kidney beans, Basmati rice, and 2 cups of water to the saucepan.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

Fluff the pilaf with a fork and garnish with chopped cilantro.
