Ethiopian-Italian Chicken Stew
A fusion of Italian and Ethiopian flavors, this hearty stew is made with chicken, cranberries, and the spices of Ethiopia.
Ingredients
- β1 1/2 pounds chicken breastcut into 1-inch pieces
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons misir wot spice mixEthiopian spice blend
- β1 can canned crushed tomatoes28 oz
- β1 cup cranberriesfresh or frozen
- β2 tablespoons olive oilfor cooking

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Remove the chicken from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is softened, about 5 minutes.

Add the misir wot spice mix and cook for 1 minute.

Add the crushed tomatoes and cook for 10 minutes.

Add the chicken back to the pot and stir in the cranberries.

Bring the stew to a simmer and cook for 20 minutes, or until the chicken is cooked through.

Season with salt and pepper to taste.
