Vegetarian Tagine Belle Epoque
Inspired by the flavors of Tunisia, this hearty vegetarian tagine is a delicious twist on traditional North African cuisine.
Ingredients
- β1 cup Glorious Olives
- β1 cup Tunisian Apricots
- β2 Bell Peppers
- β2 Carrots
- β2 inches Ginger
- β1 tsp Cumin
- β1 tsp Paprika
- β1 tsp Salt
- β1/2 tsp Cinnamon
- β2 tbsp Coconut Oil

Heat the coconut oil in a large clay or ceramic tagine over medium heat.

Add the ginger and cook, stirring occasionally, until fragrant, 4-5 minutes.

Add the bell peppers and carrots and cook, stirring occasionally, until they begin to soften, 5 minutes.

Add the cumin, paprika, salt, and cinnamon and cook for 1 minute, stirring constantly.

Add the olives, apricots, and enough water to cover the ingredients. Bring to a boil, then reduce the heat to low and simmer, covered, until the vegetables are tender, 20-25 minutes.

Taste and adjust the seasoning as needed.
