Dutch Spring Vegetable Pilaf
A hearty and flavorful vegetarian pilaf dish featuring a medley of spring vegetables.

- β2 dutch baby bell peppers
- β1 cup pilaf rice mix

Heat olive oil in a large skillet over medium-high heat.

Add diced spring onion and cook for 1-2 minutes until translucent.

Add sliced carrots and cook for an additional 3-4 minutes until tender.

Add sliced bell peppers and cook for 2-3 minutes until they start to soften.

Add pilaf rice mix and stir to combine with vegetables.
