Brazilian Black Bean Stew
A hearty and comforting stew originating from Brazil, featuring tender black beans, a blend of spices, and a hint of gentle flavors.
Ingredients

- β1 medium diced onion
- β2 cloves minced garlic
- β1 medium diced bell pepper
- β1 (14.5 oz) can canned diced tomatoes
- β2 cups vegetable broth
- β1 tsp Brazilian-style stew seasoning
- β1 tsp gentle ground cumin
- βto taste salt and pepper

Heat 2 tbsp of oil in a large pot over medium heat. Add the onion, garlic, and bell pepper and cook until the vegetables are softened.

Add the black beans, diced tomatoes, vegetable broth, stew seasoning, and cumin. Stir to combine.

Bring the stew to a simmer, then reduce the heat to low and cook for 20-25 minutes or until the flavors have melded together.
