Vietnamese Spring Rolls with Rice Noodle Salad
A fusion of Vietnamese and Italian flavors, these spring rolls are served with a refreshing rice noodle salad.
Ingredients
- β1 package spring rolls
- β1 cup rice noodle
- β1 bunch fresh herbssuch as basil and mint
- β1 cup grated carrot
- β1 cup grated zucchini
- β2 tbsp peanut butter
- β2 tbsp soy sauce
- β2 tbsp rice vinegar
- β1 tsp sugar
- βto taste salt
Instructions

Cook rice noodle according to package instructions.

Chop fresh herbs and set aside.

Grate carrot and zucchini and set aside.

In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sugar, and salt.

Add grated carrot and zucchini to the peanut butter mixture and stir to combine.

Add cooked rice noodle to the peanut butter mixture and stir to combine.

Add chopped fresh herbs to the peanut butter mixture and stir to combine.
