Keto Ukrainian Stew
A hearty and comforting stew made with tender beef, sweetcorn, and a hint of garlicky flavor, all within a keto diet.
Ingredients
- β500g Beef (tender)Cut into 2-inch cubes
- β2 tablespoons Garlicky oil
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1 cup Sweetcorn (fresh or canned)
- β2 cups StewBeef broth or stock
Instructions

Heat the garlicky oil in a large Dutch oven over medium-high heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the beef cubes and cook until browned on all sides, about 5-7 minutes.

Add the sweetcorn and stew, and bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours or until the beef is tender.
