Smoky Chicken Empanadas
A twist on traditional Japanese empanadas, filled with smoky chicken and topped with a garlicky sauce.
Ingredients
- β1 pound chicken breastboneless and skinless
- β3 cloves garlicminced
- β2 tablespoons soy sauce
- β1 package empanada doughhomemade or store-bought
- β1 egg, beaten water
- β1 tablespoon olive oil
- β1 teaspoon smoked paprika

Preheat the oven to 375Β°F (190Β°C).

In a small bowl, mix together soy sauce, garlic, and smoked paprika.

Cut the chicken breast into small pieces and coat with the soy sauce mixture.

Wrap the empanada dough in plastic wrap and let it rest for 10 minutes.

Roll out the empanada dough to a thickness of 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

Place a spoonful of the chicken mixture in the center of each dough circle.

Brush the edges of the dough with the beaten egg and fold the dough in half to form a half-moon shape.

Press the edges together to seal the empanada and use a fork to crimp the edges.

Brush the tops of the empanadas with olive oil and bake for 15-20 minutes, or until golden brown.
