Kongnamul Japchae
Stir-fried glass noodles with vegetables, a popular Korean dish. Japchae is a classic Korean glass noodle stir-fry made from sweet potato starch noodles and a variety of vegetables.
Ingredients
- β2 tablespoons garlicky soy sauce
- β200g quick-cooking sweet potato starch noodles
- β1 tablespoon dutch processed sugar
- β200g soybean sprouts
- β2 tablespoons kongnamul (korean anchovies)optional
- β1 cup folded spinach
Instructions

Cook the noodles according to the package instructions and set aside.

In a large pan, heat the soy sauce and sugar over medium heat.

Add the soybean sprouts and cook for 2-3 minutes.

Add the kongnamul (if using) and cook for another minute.

Add the cooked noodles to the pan and stir-fry for 2-3 minutes.

Add the spinach and stir-fry until wilted.

Season with salt and pepper to taste.

Transfer to a serving platter and garnish with toasted sesame seeds (if desired).
