Crisp Spring Rolls
Delicious and easy-to-make crispy spring rolls with a savory filling. Perfect as a snack or appetizer.
Ingredients
- β1 package spring rolls wrappersusually found in the frozen food section
- β1 package garlicky wonton fillinghomemade or store-bought
- β1/2 cucumbersliced
- β1/2 carrotsshredded
- β1/4 cup green onionschopped
- β1/2 cup veggie oilfor frying

Preheat oil in a deep frying pan to 350Β°F (175Β°C).

Prepare the spring rolls according to the package instructions.

In a pan, heat 2 tablespoons of veggie oil over medium heat.

Add the sliced cucumber and shredded carrots to the pan.

Cook for 2-3 minutes or until the vegetables are slightly tender.

Add the chopped green onions to the pan and stir-fry for another minute.

To assemble the spring rolls, lay a wrapper flat and place about 1 tablespoon of the wonton filling in the center.

Add the cooked vegetables on top of the filling.

Fold the bottom half of the wrapper up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

Repeat with the remaining wrappers and filling.

When the oil is hot, add a few spring rolls to the pan (do not overcrowd).

Fry the spring rolls until they are golden brown and crispy, about 2-3 minutes on each side.
