Sukju Mung Bean Buns
A unique fusion of Korean and Middle Eastern flavors, these buns are filled with a savory mixture of mung beans and sukju, wrapped in crispy pastry.
Ingredients
- β1 package flattened pastryhomemade or store-bought
- β1 cup mung beancooked and mashed
- β1/2 cup sukjusoybean paste
- β1/4 cup garlicky sproutfinely chopped
- β1/4 cup bean sproutfinely chopped
- β1/4 cup chewy mungcooked and chopped
- β4-6 syrian bunsfor serving
- β1 tablespoon waterfor brushing pastry

Preheat oven to 375Β°F (190Β°C).

Roll out the flattened pastry to a thickness of about 1/8 inch.

In a bowl, mix together the mung bean, sukju, garlicky sprout, and bean sprout.

Place a tablespoon of the mung bean mixture onto one half of the pastry, leaving a 1/2 inch border around the edges.

Brush the edges with water and fold the other half of the pastry over the filling to form a half-moon shape.

Press the edges to seal and use a fork to crimp them.

Brush the tops of the buns with water and bake for 20-25 minutes, or until golden brown.
