Nordic Braised Pot Roast
A hearty, comforting Norwegian-inspired pot roast dish made with slow-cooked beef and root vegetables.
Ingredients
- ●1.5 kg Pot Roast (full cut)
- ●2 tbsp Full-fat Norwegian Yogurt
- ●1 cup Braising Liquid (beef broth)
- ●4 Carrots
- ●4 Potatoes
- ●2 Onions
- ●3 cloves Garlic
- ●1 tsp Salt
- ●1 tsp Black Pepper
- ●2 sprigs Fresh Thyme

Preheat the oven to 300°F (150°C).

Season the pot roast with salt and black pepper.

Heat a large Dutch oven over medium-high heat. Sear the pot roast until browned on all sides, then remove it from the pot.

Reduce heat to medium and sauté the onions and garlic until softened.

Add the carrots, potatoes, and braising liquid to the pot. Stir to combine.

Return the pot roast to the pot and bring the liquid to a simmer.

Cover the pot with a lid and transfer it to the preheated oven.

Braise the pot roast for 2 1/2 to 3 hours, or until it's tender and falling apart.

Remove the pot from the oven and stir in the full-fat Norwegian yogurt.

Serve the pot roast with the vegetables and sauce spooned over the top.
