Roasted Australian Lamb Roast
A traditional Australian dish featuring a perfectly roasted lamb roast, served with a side of roasted vegetables.
Ingredients
- ●1.5 kg Australian lamb roast
- ●3 cloves roasted garlic
- ●2 sprigs fresh rosemary
- ●1 sprig fresh thyme
- ●60 ml olive oil
- ●1 tsp sea salt
- ●1 tsp black pepper
- ●4 medium carrots
- ●4 medium potatoes
- ●2 medium onions

Preheat oven to 220°C (425°F).

Season the lamb roast with salt, pepper, rosemary, and thyme.

Heat the olive oil in a large oven-safe pan over medium-high heat.

Sear the lamb roast on all sides until browned, about 2-3 minutes per side.

Transfer the pan to the preheated oven and roast for 20 minutes.

Reduce heat to 180°C (350°F) and continue roasting for an additional 40-50 minutes, or until the lamb reaches your desired level of doneness.

Toss the carrots, potatoes, and onions in a bowl with a little olive oil, salt, and pepper.

Spread the vegetables out in a single layer on a baking sheet and roast in the oven for 30-40 minutes, or until tender.
