Thai-Style Beef Stew
A hearty and flavorful stew inspired by the cuisine of Thailand, made with tender beef and a medley of fresh vegetables.
Ingredients

- β2 tablespoons uruguayan oregano
- β1 cup shredded (optional) cheese (optional)
- β2 cups beef broth
- β2 tablespoons fish sauce
- β2 tablespoons brown sugar
- β2 tablespoons Thai red curry paste
- β1 can coconut milk
- β1/4 cup chopped fresh basil
- β1 large, sliced red bell pepper

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes.

Add oregano, fish sauce, brown sugar, and curry paste; cook, stirring constantly, for 1 minute.

Add beef broth and bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours, or until beef is tender.

Stir in coconut milk and cook for an additional 10 minutes.
