Tunisian Corn Fritters
A crispy and comforting vegetarian snack inspired by Tunisian cuisine, made with cornmeal and gooey cheese.
Ingredients
- β1 1/2 cups cornmeal
- β1 sheet, thawed pastry
- β1 cup, shredded cheese, gooey
- β2 large eggs
- β1/2 cup milk
- βa pinch salt
- βa handful, chopped fresh parsley
- βa handful, chopped fresh cilantro

Preheat the oven to 400Β°F (200Β°C).

Cut the pastry into small squares and set aside.

In a large bowl, whisk together cornmeal, eggs, milk, and a pinch of salt.

Add the shredded cheese and mix until well combined.

Add the chopped parsley and cilantro to the bowl and mix until just combined.

Roll out the pastry squares and brush with a little milk.

Spoon a small amount of the cornmeal mixture onto each pastry square.

Fold the pastry squares in half to form triangles and press the edges to seal.

Place the fritters on a baking sheet lined with parchment paper.

Brush the tops of the fritters with a little milk and sprinkle with a pinch of salt.
