Middle Eastern Tagine with Fresh Tomatoes
A flavorful and aromatic stew originating from Morocco, made with fresh tomatoes, fluffy rice, and a blend of spices.
Ingredients
- β2 pounds Fresh Tomatoes
- β2 cups Fluffy Rice
- β1 tablespoon Tagine Spice Blend
- β1 cup Middle Eastern Olives
- β2 tablespoons Olive Oil
- β1 medium Onion
- β3 cloves Garlic
- β2 tablespoons Lemon Juice
- βto taste Salt
- βto taste Black Pepper
Instructions

Heat olive oil in a large tagine or Dutch oven over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add fresh tomatoes, middle eastern olives, and tagine spice blend. Stir to combine.

Add fluffy rice and stir to coat with the spice mixture.

Add lemon juice and stir to combine.
