Vietnamese Pork Spring Rolls
Delicious spring rolls filled with pork, vegetables and herbs, perfect for a snack or appetizer. Originating from Vietnam, these fresh rolls are typically served with a sweet and spicy sauce.
Ingredients
- β1 pound Pork, ground
- β1/2 cup Fresh Vietnamese mint leaves
- β1/2 cup Shredded carrots
- β1/2 cup Rice noodles
- β1/2 cup Cucumber
- β1/4 cup Cabbage
- β1/4 cup Fresh cilantro leaves
- β2 tablespoons Fried shallots
- βto taste Salt
- β1 tablespoon Sugar

Soak the rice noodles in hot water for 5-7 minutes, or according to package instructions.

In a large pan, cook the ground pork over medium-high heat, breaking it up with a spoon as it cooks, until it is no longer pink, about 5-7 minutes.

Add the sugar, salt, and fried shallots to the cooked pork and stir to combine.

Add the cooked noodles, shredded carrots, cucumber, cabbage, mint leaves, cilantro leaves, and cooked pork mixture to a large bowl.

Mix well to combine.

To assemble the spring rolls, lay a rice paper wrapper on a clean surface.

Place about 1/2 cup of the pork and noodle mixture in the center of the wrapper.

Fold the bottom half of the wrapper up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

Repeat with the remaining ingredients.

Serve the spring rolls with a sweet and spicy sauce, if desired.
