Peruvian Stir Fry with Fragrant Onion

- β1 teaspoon PeruvianGround Peruvian spice blend
- β2 tablespoons Stir FryVegetable or peanut oil for stir-frying
- β1 cup RiceCooked according to package instructions
- β1 medium Bell PeppersSliced into thin strips
- β1 medium CarrotsSliced into thin strips

Heat 2 tablespoons of stir fry oil in a large skillet over medium-high heat.

Add the chopped fragrant onion and cook until translucent, about 3-4 minutes.

Add the sliced bell peppers, carrots, and snow peas to the skillet. Cook for an additional 4-5 minutes, or until the vegetables are tender.

In a small bowl, whisk together the Peruvian spice blend, soy sauce, and lime juice. Pour the sauce over the vegetables in the skillet and stir to combine.
