Pork Skewers with Filipino Flair
Grilled pork skewers infused with the bold flavors of the Philippines, perfect for a summer evening.
Ingredients
- β500g Pork shoulder, cut into 1-inch cubes
- β250ml Fragrant Filipino marinade (see below)
- β10-12 Wooden skewers, soaked in water for 30 minutes
- β20g Fresh cilantro, chopped
- β4 Lime wedges
- βto taste Salt and pepper

In a blender or food processor, combine 2 cloves garlic, 1 tablespoon fish sauce, 1 tablespoon vinegar, 1 tablespoon brown sugar, and 1 teaspoon black pepper. Blend until smooth.

In a large bowl, combine the pork cubes and the marinade. Mix well to coat.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat grill to medium-high heat.

Thread 5-6 pieces of pork onto each skewer, leaving a small space between each piece.

Brush the grill with oil to prevent sticking.

Grill the skewers for 8-10 minutes per side, or until the pork is cooked through.

Transfer the skewers to a plate and garnish with chopped cilantro and a squeeze of lime juice.

Note: If using a charcoal grill, make sure to cook the skewers over medium heat to prevent burning.
