Grape and Tomato Frittata
A simple Italian-style omelette filled with fresh grapes and tomatoes. Perfect for brunch or breakfast.

- ●2 slices Fluffy portuguese breadFor making breadcrumbs
- ●1 cup GrapesRed or green grapes, halved
- ●2 TomatoesCherry or grape tomatoes, halved

Instructions

Preheat the oven to 375°F (190°C).

Cut the fluffy portuguese bread into small pieces and toast until crispy.

In a large bowl, whisk the eggs and season with salt and pepper.

Heat a small non-stick pan over medium heat.

Add the toasted bread to the pan and cook for 2-3 minutes.

Add the halved grapes and tomatoes to the pan and cook for another 2-3 minutes.

Pour the whisked eggs over the bread, grapes, and tomatoes.

Transfer the pan to the preheated oven and bake for 15-20 minutes or until the eggs are set.
