Ukrainian Lentil Pilaf
Hearty and flavorful, this Ukrainian-inspired lentil pilaf is a comforting meal for any time of day.
Ingredients

- β2 cups fluffy pilaf rice
- β1 medium red onion
- β2 medium green carrot
- β2 tablespoons olive oil
- βto taste salt
- βto taste black pepper
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the diced red onion and cook until softened, about 5 minutes.

Add the sliced green carrots and cook for an additional 5 minutes.

Add the lentils and pilaf rice to the saucepan, stirring to combine.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes, or until the water has been absorbed and the lentils and rice are tender.
