Fried Mediterranean Sweet Potato Pilaf
A flavorful and easy-to-make pilaf dish featuring sweet potatoes, a mediterranean twist.

Preheat the oven to 400°F (200°C).

Peel and dice the sweet potatoes into 1-inch cubes.

Heat the olive oil in a large skillet over medium-high heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.
