Twice-Baked Polish Potatoes
A delicious and comforting side dish that's easy to make and impressive to serve. Fluffy potatoes are filled with a rich and creamy filling, topped with crispy bacon.
Ingredients

- β2 tablespoons butter
- β1 cup grated cheddar cheese
- β1/2 cup sour cream
- β2 tablespoons chopped fresh chives
- β1 teaspoon salt
- β1/2 teaspoon pepper

Preheat oven to 400Β°F (200Β°C).

Scrub the potatoes clean and poke some holes in each with a fork.

Bake the potatoes for 45-60 minutes, or until they're tender when pierced with a fork.

While the potatoes are baking, cook the bacon in a pan over medium heat until crispy.

Remove the potatoes from the oven and let them cool for a few minutes.

Slice the potatoes in half lengthwise and scoop out most of the flesh, leaving a thin layer to hold the potato together.

In a bowl, mash the potato flesh with the butter, cheese, sour cream, chives, salt, and pepper.
