Borscht Quesadillas
A fusion twist on traditional Mexican quesadillas, using the flavors of borscht for a unique and delicious experience.
Ingredients
- β1 cup Borscht
- β4 Flour Tortillas8-10 inches in diameter
- β1 cup Shredded Cheese
- β1/4 cup, finely chopped Cure (Dill Pickle)
- β1/2 cup Sour Cream
- β1/4 cup Chopped Cilantro
- β4 Lime Wedges
Instructions

Preheat a large skillet or griddle over medium heat.

In a bowl, mix together borscht, shredded cheese, and chopped cure.

Place a flour tortilla in the skillet and sprinkle a quarter of the borscht mixture onto half of the tortilla.

Fold the tortilla in half to enclose the filling.

Cook for 2-3 minutes or until the tortilla is crispy and the filling is melted.

Flip the quesadilla and cook for an additional 2 minutes or until the other side is also crispy.

Repeat with the remaining tortillas and filling.

Cut the quesadillas into wedges and serve with sour cream and cilantro.
